So I felt like having nachos but I didn’t have tortilla chips.
Quarter the potatoes and blanche. Drain and then stick in a bowl. Season with salt and pepper and any other spices that you fancy. Im thinking cumin, coriander, cayenne pepper or whatever. Pour in some oil and make sure the tatties are coated in all that good stuff.
Stick in the oven for 15-20mins.
In the meanwhile, dice a couple of tomatoes, chop the coriander, dice the shallot and mix it all up. Add in some lime juice and season with salt and pepper. Sweeten with a little sugar or agave if it takes your fancy.
When the wedges are about done, spoon/pour the salsa over the wedges. Scatter some olives and jalapeños and top with grated cheese.
Grill until the cheese is all melted.
