My bananaaaaaaaaah potato and leek soup recipe. Sorry, couldn’t help it.
Dice the onion and mince the garlic. Stick them in a pot with a little oil and butter and sweat. Don’t sweat the technique, it just means you have to to cook it for a while at a low heat so that the onion and garlic don’t take on any colour. While the onions and garlic do their thing, dice the leeks, potato and celery. When the onions are translucent add the leeks and celery. Cook for a few minutes until the leeks are soft and then add the stock and potatoes. The stock should cover the vegatables. If not, add more boiling water. Simmer for 20 minutes or until the potatoes are soft and if the soup is looking a bit sludgy, add some boiling water. Season the soup with salt and pepper. Serve with bread of some description.
- 3-4 bowls. Depends on how greedy you are I guess.

- Half an onion, diced
- 2 cloves garlic, minced
- 1 stick celery, diced
- 3 small leeks, diced
- 4 baby potatoes, peeled and diced
- Pint of vegetable stock, hot and salty
