A few pints deep on a Friday evening and feeling ill-ish, I head home early. A nice hearty bowl of soup followed by some bed-rest is in order. After perusing the soups in the supermarket, I decide to just make my own.
What is wrong with me?
Dice the carrot, celery, onion and cabbage. Stick in a pot with a little oil/butter and sweat.
While that is happening, dice the tomatoes and a small potato and stick it in the pot.
Add a pint of veg stock and a good squeeze of tomato paste and squirt of garlic paste and some oregano and chilli powder.
Snap the spaghetti and add to soup. Stick in a bit of leftover Parmesan rind and balsamic vinegar.
Bring to a boil and then simmer for about 30 mins.
Season with salt and pepper to taste.
Oh, stick in some spring onions if you feel like it and fish out the Parmesan rind before you serve.

- 4 tomatoes
- 1/2 an onion
- 2 sticks of celery
- 1 potato
- Handful of spaghetti
- 1/2 teaspoon of oregano
- 1 tablespoon of tomato puree
- 1 teaspoon of garlic paste

- Parmesan rind
- 1/4 white cabbage
- 1 stalk of spring onion
- 1/2 teaspoon of chilli powder
- 1 teaspoon of balsamic vinegar
