The plantain I bought 3-4 weeks ago was looking ripe so I figured bread.
Preheat oven to 180°C.
Stick the plantain and the brown sugar in a bowl and mash up good. I find a meat hammer is decent if you don’t have a masher.
Add the butter, egg and vanilla extract to the mixture and stir well.
In a separate bowl, mix the flour, salt, cinnamon and the bicarbonate of soda.
Add the dry mixture to the plantain puree and mix.
Pour into a small greased loaf tin and bake for 25-30mins.
I didn’t really keep track of the time and as a result it came out a little burnt round the edges. It was still tasty tho.
- Stuff you need
- 2 large ripe plantain
- 1/4 cup brown sugar
- 3 tablespoons coconut butter
- 1/2 egg beaten
- 1/2 teaspoon vanilla extract
- 1/2 cup ground almond and 1/4 cup strong white flour
- Pinch of salt
- 3/4 teaspoon ground cinnamon
