Ive been making pizza for a while but the results had been a mixed bag. Some were ok and others down right nasty; might as well be eating cardboard. It was that varied.
I steeled myself for one more round (I didn’t hear no bell). No messing this time; it had to be nothing short of a knockout.
The traditional, mechanical scales were kicked to the kerb and I got me some digital ones; I could measure things accurately for the first time. I followed the pizza dough recipe was followed to a tee.
I topped mine with a light coating of tomato sauce; pulled beef; shredded kale; jalapeños and flakes of cheddar and gruyere. It was thin, crispy and still a touch chewy. No judges verdict here; right left right, head on the canvas.
